What exactly is cinnamon?

Did you know that Cinnamon is a small evergreen tree 30 to 50 feet tall? It is native to Sri Lanka and South India. The actual spice comes from the innerside of the bark. The thin pieces of bark roll upon drying and create what are called quills. These are from Indonesian Cassia. These quills are the cinnamon sticks we see in the grocery and carfts. When you see cinnamon that looks more like twigs it is more likely to be Chinese Cassia.
